Fluffy Gluten-Free Belgian Waffles

- 1 Belgian Waffle Maker Recommended
- 3 Mixing Bowls
- 1 Hand mixer
- 1 Stand Mixer: optional
Ingredients
Dry Ingredients
- 2 cups / 250g Gluten-Free All Purpose Flour
- 4 tsp Baking Powder
- 1/2 tsp Salt
- 1/4 cup Sugar
- 3 tsp Cinnamon
Wet Ingredients
- 2 eggs Separated: Egg white in separate bowl
- 1/2 cup Oil
- 2 cup Lactose-Free Milk
- 1 1/2 tsp Vanilla Extract
- 1/2 tsp Butter Extract: Optional
Instructions
- Preheat the waffle maker to medium-high heat.
- Mix the gluten-free flour, baking powder, salt, sugar, and cinnamon together in a large bowl.
- In a separate bowl, mix together the egg yolks, oil, milk, vanilla, and butter extract. Add this mixture to the dry ingredients and stir until combined. Be careful not to over mix.
- In a separate bowl, beat the egg whites with a hand mixer until stiff peaks form.
- Fold the egg whites gently into the waffle mixture.
- Using a 1/4 cup scoop, add the batter to the waffle maker. Typically, each section takes about 1/4 cup of batter, but use your best judgment. Cook until golden brown.

Turn on Waffle Maker
Place your waffle maker on medium-high heat.
After testing different temperatures for this recipe, we’ve found that cooking it over medium-high heat for about 5 to 7 minutes results in a perfectly golden-brown, crisp exterior and a soft, fluffy interior.
Feel free to use your best judgment and have fun experimenting with your waffle maker to achieve your ideal result—this is the fun part, after all! 🙂
Mix Dry Ingredients
In a large bowl, we mixed the gluten-free flour, baking powder, salt, sugar, and cinnamon.
We usually use the bowl from our stand mixer, and we’re pretty heavy-handed with the cinnamon.
The measurements for the cinnamon in the recipe are approximate, but we have yet to put too much cinnamon in ours :).
Mix Wet Ingredients
In a separate bowl we mixed the egg yolks, oil, milk, vanilla, and butter extract.
For the eggs, we separated the yolks and placed the egg whites in a separate, smaller bowl. We’ll use these in a bit.
Add Wet mix into Dry mix
We slowly added the wet mixture to the dry ingredients and stirred just until everything was combined, being careful not to overmix.
To make sure everything was well incorporated, we turned our stand mixer on low and let it do the work without overworking the batter.
Beat egg whites to stiff peaks
We used a hand mixture and beat the egg whites till stiff peaks formed. Usually takes about 5 minutes with our mixture on high.
Slowly fold in egg whites
This step is what gives our waffles their fluffy texture while maintaining a crispy exterior.
Gently fold in the egg whites until they are mostly incorporated, but be careful not to overmix—you should still see a few streaks of egg whites in the batter.
Make the waffles
With the batter ready to go and our waffle maker nice and hot, we sprayed a bit of non-stick spray, and dropped 1/4 cup worth of batter in each segment and made sure every gap is covered. The batter may expand a bit, but that’s OK. 🙂
Closed waffle maker and waited 5 minutes.
All done!
Removed the waffle from the waffle maker, and we topped ours with maple syrup and strawberries.
