Mix the gluten-free flour, baking powder, salt, sugar, and cinnamon together in a large bowl.
In a separate bowl, mix together the egg yolks, oil, milk, vanilla, and butter extract. Add this mixture to the dry ingredients and stir until combined. Be careful not to over mix.
In a separate bowl, beat the egg whites with a hand mixer until stiff peaks form.
Fold the egg whites gently into the waffle mixture.
Using a 1/4 cup scoop, add the batter to the waffle maker. Typically, each section takes about 1/4 cup of batter, but use your best judgment. Cook until golden brown.
