Easy Gluten-Free Low FODMAP Meatloaf

This recipe creates a delicious, family-friendly version of the classic comfort dish, tailored for those following a low FODMAP diet. Made with ground beef, gluten-free Rice Flour Panko breadcrumbs, and low FODMAP-friendly seasonings, it offers all the savory flavors of traditional meatloaf without triggering digestive issues.

Ingredients
  

  • 1.5 lbs Ground Beef
  • 1 cup Gluten-Free Rice Flour Panko Bread Crumbs
  • 1/2 cup Lactose Free Milk
  • 1 Large Egg — Beaten
  • 2 tbsp Ketchup
  • 1 tbsp Worcestershire Sauce
  • 2-3 tbsp Dried Parsley
  • 1 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Chopped Green Onions

For the Sauce Topping

  • 1/3 cup Ketchup
  • 2 tbsp Brown Sugar
  • 1 tbsp Red Wine Vinegar
  • 1 tbsp Worcestershire Sauce

Instructions
 

  • Preheat the oven to 350°F
  • In a large bowl, combine the ground beef, bread crumbs, green onions, milk, egg, 2 tablespoons of ketchup, 1 tablespoon of Worcestershire sauce, dried parsley, sea salt, and black pepper. Mix thoroughly using your hands or a stand mixer until everything is well incorporated.
  • Place the meat mixture into a loaf pan, or, if using a baking sheet lined with parchment paper, shape the meatloaf by hand into your desired form.
  • In a separate bowl, mix together 1/3 cup of ketchup, brown sugar, red wine vinegar, and worcestershire sauce until well combined. Spread evenly over the top of meat loaf.
  • Bake uncovered for 55 minutes.
  • Rest meatloaf for 10 minutes, then serve. Our favorite sides to pair with this dish are mashed potatoes, corn, and green beans.

Pre-heat Oven

We began by preheating the oven to 350°F, ensuring it reached the perfect temperature for baking.

Creating the meat loaf

In 1 large bowl we added the ground beef, Gluten Free Rice Flour bread crumbs, green onions, lactose-free milk, egg, 2 tablespoons of ketchup, 1 tablespoon of Worcestershire sauce, dried parsley, sea salt, and black pepper.

We used a stand mixer on 2nd speed setting to thoroughly mixed everything until it was perfectly blended.

Once everything is mixed, we balled up the meet in the mixer bowl.

Shape meat loaf

We lined a baking pan with parchment paper and placed the meat mixture on the pan.

Instead of using the pan, we shaped our loaf by hand, ensuring it was tightly packed so it would hold together nicely while baking.

Make the glaze

In a separate bowl, we mixed together 1/3 cup of ketchup, brown sugar, red wine vinegar, and Worcestershire sauce until fully combined.

Then, we spread the mixture evenly over the top of the meatloaf.

Bake!

Placed the pan in the pre-heated oven and baked uncovered for 55 minutes.

Resting

Before taking it out of the oven, we checked the internal temperature in a few different spots to ensure it had reached a safe level.

Once confirmed, we removed the meatloaf from the oven and let it rest for 15 minutes while we got the plates ready.

Serve and enjoy!

Our house smelled so good, we paired ours with corn and mashed potatoes.
