Easy Gluten-Free Low FODMAP Meatloaf

- 1.5 lbs Ground Beef
- 1 cup Gluten-Free Rice Flour Panko Bread Crumbs
- 1/2 cup Lactose Free Milk
- 1 Large Egg — Beaten
- 2 tbsp Ketchup
- 1 tbsp Worcestershire Sauce
- 2-3 tbsp Dried Parsley
- 1 tsp Sea Salt
- 1/2 tsp Black Pepper
- 1/2 cup Chopped Green Onions
For the Sauce Topping
- 1/3 cup Ketchup
- 2 tbsp Brown Sugar
- 1 tbsp Red Wine Vinegar
- 1 tbsp Worcestershire Sauce
Preheat the oven to 350°F
In a large bowl, combine the ground beef, bread crumbs, green onions, milk, egg, 2 tablespoons of ketchup, 1 tablespoon of Worcestershire sauce, dried parsley, sea salt, and black pepper. Mix thoroughly using your hands or a stand mixer until everything is well incorporated.
Place the meat mixture into a loaf pan, or, if using a baking sheet lined with parchment paper, shape the meatloaf by hand into your desired form.
In a separate bowl, mix together 1/3 cup of ketchup, brown sugar, red wine vinegar, and worcestershire sauce until well combined. Spread evenly over the top of meat loaf.
Bake uncovered for 55 minutes.
Rest meatloaf for 10 minutes, then serve. Our favorite sides to pair with this dish are mashed potatoes, corn, and green beans.
