Instructions
Preheat the oven to 275°F.
Create the Dry Rub
In a small bowl, combine ground mustard, brown sugar, smoked paprika, salt, black pepper, and ginger. Mix until the spices are well blended. Set aside.
Prepare the Ribs
Remove the ribs from the package and rinse them thoroughly under cold water to clean off any residual packaging liquids or particles. Pat them dry with paper towels.
Remove the silver skin, or larger fat portions from the meat side of the ribs by gently sliding a knife under the membrane and peeling it off, be careful not to remove any usable meat.
Turn the ribs over to the membrane side, and either score the membrane in a grid pattern or remove it completely. Scoring the membrane helps it break it down during cooking without fully removing it. We recommend scoring, it's much quicker.
Using a quarter of the rub mixture on each side, evenly coat the membrane/bone side of the ribs with the dry rub. Then, repeat the process on the meat side, ensuring both sides are well-seasoned for full flavor.
Baking the Ribs
Lay a sheet of foil over your cookie sheet without pressing it into the pan. Place the ribs on the foil, then lay another piece of foil on top. Fold the edges of the top and bottom foil sheets together, creating a large, sealed foil pocket around the ribs. This will help retain moisture while cooking.
Place the foil-wrapped ribs on a baking sheet and bake them in the oven at 275°F for 4 hours, undisturbed. This slow cooking method ensures the ribs become tender and flavorful.
Remove the ribs from the oven and set them aside. Then, set your oven to broil.
While the oven is heating to broil, carefully undo the foil packet, removing only the top sheet of foil. Cover the ribs generously with your preferred barbecue sauce, then let them rest for 10 minutes to absorb the flavors.
When your oven is ready to broil, place the ribs back in the oven, uncovered. Broil them for 10-15 minutes to crisp up the top layer, creating a flavorful, caramelized finish. Keep an eye on them to prevent burning.
Remove the ribs from the oven and enjoy! The ribs will be so tender, they’ll slide right off the bone, making for a perfect meal. Enjoy your delicious creation!
